Intrapersonal: Diary Entry of Hari
Dear Diary,
I am extremely stressed and angry. I am only 12 years old. Do I deserve this? I am the breadwinner of the family. My mum is extremely sick and is suffering from malnutrition. I cannot bear to see my mum getting abuse by the good-for-nothing pig.
My mum worked her heart out to provide for the family, but it was ruin because of my stupid father. He destroys pots and plates, beat us up, use up our last cent to buy toddy, this is infuriating. I really want to leave this city.
I feel that luck is beginning to turn when I met De Silva who cant understand me and gave me a job. Unfortunately, leaving here to Bombay is a very big decision. If I leave my family to work, my sister might not have the emotional support to continue, and there might be many family issues at home. But if I stay, my dad would torture me and we would be in debt due to his toddy addiction. I hope that whatever path I aam going to choose, will bring my family happiness. I hope that god will give me a sign on whether I should go to Bombay or remain in Thul.

How to make Chapathi:•Prepare dough by mixing together ½ cup of water with 1 tsp salt, 1 tsp ghee and just enough wheat flour.
* 1 cup of Wheat flour (can use wholemeal flour)
* 1/2 tsp salt (optional)
* 1 tsp ghee
* 65 ml of warm water
•Knead well.
•Keep aside for about 45 mins.
•Take some dough and make small balls - size half of tennis balls.
•Dust with wheat flour.
•Roll into chapatis on a rolling board.
•Ready the chapati tawa and keep on flame.
•Roast both sides of chapati on the tawa moderately.
•Ready to serve.
•Add ghee on top of chapati if needed.
The difference in how Chapathi and Roti Prata are made :
•Chapathi requires lesser oil that roti prata and is probably healthier.
•Roti Pratas are actually cooked without oil compared to Chapathi.
How to make Jalebi:
2 cups All purpose flour (maida)
11/2 tbsp fine grained semolina or rice flour
1/4th tsp baking powder
2 tbsp curd (plain yogurt)
11/4th cups warm water
1/2 tsp saffron threads, slowly dry-roasted and powdered
3 cups sugar
22/3rd cups water
1/2 tsp green cardamom seeds powder
11/2 tbsp kewra water or rose water
Ghee or vegetable oil for frying
How to make jalebi:
•Mix the flour, semolina or rice flour, baking powder, curd and 3/4th cup of the water in a bowl (preferably a ceramic bowl). Mix well with a whisk.
•Mix well and then add remaining water and 1/8th tsp. of saffron powder, and whisk until smooth.
•Set aside for about 2 hours to ferment.
•Whisk thoroughly before use.
•Prepare one string syrup by dissolving sugar in the water. Just before the syrup is ready add saffron and cardamom powder.
•Heat oil in a kadhai. Pour the batter in a steady stream ( or coconut shell with a hole) into the kadhai to form coils. Make a few at a time.
•Deep fry them until they are golden and crisp all over but not brown.
•Remove from the kadhai and drain on kitchen paper and immerse in the syrup.
•Leave for at least 4-5 minutes so that they soak the syrup.
•Take the jalebi out of syrup and serve hot.
The difference in how jalebi and you tiao are made :
•You Tiao uses more oil to fry than Jalebi
•Jalebi is dipped in sugar while You Tiao has no sugar content
•Jalebi is crispy while You Tiao is soft.
•Jalebi uses much more sugar content that You Tiao and it is more unhealthy.
